Chicken Salad

My chicken salad recipe made from whole chickens.

 

Every Saturday I will be sharing with you a recipe from this upcoming meal plan. I’m excited to start this new routine as it encourages me to get the menu planning done promptly, and I get to share some of my favorite recipes with you!

Feeding a large family on a tiny food budget is no joke! And we make that work by using whole chickens. Currently I buy my chickens at Costco, but hopefully will be butchering our own chickens by end of summer!!

Gone are the days that I can feed us all on one chicken. It’s amazing how much food they gobble up so quickly! So two chickens go in the pot tomorrow.

Meal Planning Saturday Recipe: Chicken Salad

My amazing, handy son cleans and removes all the guts for me. I don’t touch that yucky stuff. I’m a country girl and don’t mind a lot of gross stuff, but touching meat still on the bone is not one of my preferred tasks. So he takes care of that part and I go to seasoning the broth.

We use a huge stock pot and simmer these chickens all day with bay leaf, salt and pepper, carrots, onions, and celery.  After smelling that wonderful aroma all day, we have a big pot of broth and two cooked chickens for dinner.

My hubby is awesome at removing all the meat from the bones and putting the bones in the InstantPot.  We let the bones simmer all night with more seasonings and veggies and a splash of apple cider vinegar. And if I planned well, I have a bucket of onion ends, celery leftovers and carrot butts to use in my broth.

Now to the good stuff. I take all the leftover chicken meat and chop it into bite size pieces. I mix it with homemade mayo, apples, walnuts, celery, onion, and salt and pepper. This creates a delicious chicken salad for a quick lunch during the week and one of my hubby’s favorite meal to pack.

{None of my recipes have good measurements, I’m sorry. I cook by habit and by taste. So here is to my best guess!}

1 whole chicken, cut into bite size pieces

3 celery stalks, chopped

1/2 small onion, chopped

1 large apple, chopped

1/2 cup walnuts, crushed

Mayo as needed

I mix all of this together and add just enough mayo to make everything stick together. Enjoy!
